Job Description
Job Profile:
Overall day-to-day management of LA CARNITA’s Restaurant Bar. Ensure quality and consistency through constant monitoring of all aspects of the operation. To lead the bar teams from the front to create a fun, authentic and an original bar experience that will support the core values of the food and beverage department.
Outline of Roles & Responsibilities:
Main Duties:
- Lead by example and adopt a hands on style of management within the operation, always work on the floor during service periods.
- Ensure regular communication meetings are taking place within your department between all staff. Including but not limited to daily briefings, weekly operational meeting and quality circle.
- Ensure all health and safety requirements are met and kept up to date (such as Risk Assessments & COSHH). File accordingly in the administration office.
- Be fully aware of licensing laws and restrictions.
- Maintain a close working relationship with the All Department Managers, feedback all Member comments (good and bad).
- Create a personal rolling action plan with short and long term goals and targets, review your action plan with the OM/GM on a regular basis.
- Ensure that all stocks and supplies are requested in a timely manner, correct stock levels maintained and stored under optimum conditions.
- Ensure that operating equipment is used properly and not abused.
- Ensure that the Bar is fully set up & clean and tidy at all times.
- Ensure that the Standards of Performance (SOP) manual for your department is always up to date and that agreed procedures are followed at the times.
- Get to know, develop and maintain excellent relations with our customers. Develop and maintain a comprehensive guest history to ensure you and your team anticipate their needs.
- Monitor monthly beverage cost and inventory.
- Ordering/ receiving of all beverages; liaising with the kitchen in the preparation of raw ingredients and cocktail components.
- Ensuring the highest quality and preparation of LA CARNITA’s cocktail program.
- Ensuring proper beverage service throughout the restaurant.
- Periodic training of bar/ restaurant staff on available beverages.
- Periodic updating of beverage menu.
- Maintenance of equipment and facilities.
- Opening/ closing as needed.
Training & Development
- To maintain a high degree of interest in self-development, displaying this by making suggestions for realistic improvements.
- Ensure continuous corrective training takes place within your department.
- Ensure training programs are in place with designated trainers.
- To hold regular On-the-Job training sessions to ensure that staff can perform their duties correctly.
- Ensure structured induction procedures are in place and followed.
- Ensure succession planning is in place.
- Ensure regular appraisals and job chats are taking place. Formal appraisals for all staff to take place every as indicated by HR policies.
- Ensure appropriate beverage tasting & training is taking place on a regular basis, so that staffs are confident with their product knowledge and are able to describe and recommend to guests properly.
- Ensure that your team is developed and trained up to the level, so that they are equipped to deputise in your absence.
- Try to anticipate potential problems and follow company guidelines to avoid them. Inevitably, guest’s complaints will arise, therefore, when they do please follow company complaint procedure.
- To maintain high standards of morale and personal appearance of all staff.
- To ensure fair and equitable discipline, yet complying with house or company regulations.
- Training and motivating staff before, during and after service.
Personnel & Payroll:
- Ensure holiday records are kept up to date for your department and that staff take holidays in a timely fashion according to their holiday entitlement.
- Ensure company rules & procedures are followed in accordance with the staff handbook.
- Interview staff as required.
- Keep up to date on employment law and company disciplinary procedures.
Housekeeping/Maintenance:
- The general housekeeping of both the front and back of house areas of the bar is a reflection of the professionalism of the Bar Manager, therefore, daily inspections of these areas is a must.
- Ensure maintenance/cleaning audits are regularly carried out. Check all areas cleanliness daily and action accordingly.
- Ensure Administration area is clean and tidy and well maintained at all times.
- Ensure a comprehensive filing system is in place.
- Ensure the front of house areas are maintained and cleaned to the highest possible standards on a daily basis.
- Check light bulbs are working throughout the venue daily and ensure that all maintenance issues are dealt with in a timely manner.
- Inevitably, equipment and systems will break down; ensure things get fixed when broken. Liaise with higher management regarding maintenance priorities and cost.
- To be aware of all statutory regulations affecting safety and ensure that any safety hazard is rectified.
General:
- Complete all administrative duties completely and as written within the time frame given.
- Report for duty punctually wearing appropriate attire.
- Maintain a high standard of personal appearance and hygiene at all times, always remembering that you lead by example.
- Establish and maintain a good rapport and working relationship with all the staff in LA CARNITA RESTAURANT LLC and all other departments as well as suppliers.
- Provide a courteous, professional, attentive and efficient service at all times with all LA CARNITA RESTAURANT LLC departments and customers.
- Attend and contribute to all staff briefings and other related activities.
- Carry out any other responsibilities or duties as assigned.
- Support new recruits through on the job training.
Health and Safety and Welfare:
- To ensure that all potential and real hazards are reported immediately and rectified.
- Emergency procedures are rehearsed monthly and attendance records are kept; all emergency procedures need to be implemented and enforced to provide for security and safety of guest and employees.
