Job Description
We are urgently looking for a Head Chef for our Mezza House Outlet
JOB DESCRIPTION:
- Manage the opening and closing of the kitchen
- Monitor ordering and receiving food products and other supplies from Central Kitchen and Main Warehouse as required for daily operations Ensure that all food and products are consistently prepared and served according to the restaurants recipes, portioning, cooking and serving standards.
- Inspects products quality during and after preparation, and makes adjustments as required
- Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures
- Checking and maintaining proper food holding and refrigeration temperature control points.
- Ensure that all equipment is kept clean and in excellent working conditions through personal inspection and by following the stores preventive maintenance programs
- Responsible for maintaining appropriate cleaning schedules for all the kitchen and keeping a very high standard
- Maintains safe working conditions for kitchen employees and resolves safety concerns quickly.
- Attends to day-to-day problems and needs concerning equipment and food supplies; detects and ensures disposition of spoiled or unattractive food, defective supplies/equipment, and/or other unusual condition
- Manages the kitchen staff through coaching and training, in order to improve performance and to achieve the kitchen objectives and targets.
- Evaluates the performance of kitchen employees ensuring that reviews are delivered to the HR Department on time.
- Suggests salary reviews, proposes personnel actions such as promotions and provides feedback to employees.
- Maintains discipline, recommends and administers corrective actions.
- Collaborates with the HR Department to ensure the proper administration of employees’ annual leaves.
- Ensure the proper appearance (condition of uniforms) and grooming of all kitchen crew
- Maintains food production records, reports, and department files in an organized and timely manner
- Performs other duties pertinent to this job as assigned
IDEAL CANDIDATES:
- Bachelor degree in hotel management/Diploma in Culinary/or equivalent
- Minimum 5 years of experience in managing a large kitchen
- Fluent in English and Arabic
- Good computer skills
- Good knowledge of kitchen policies and procedures, their development and applications
- Excellent knowledge of Food Safety, HACCP, Sanitation, and Personal Hygiene basics
- Ordered and systematic in work
- Excellent interpersonal, communication and management skills
- Strong planning and budgetary skills
- High coaching skills are a must in order to maintain the positive and supportive role with the kitchen teams
- Highly cooperative team spirit
- Excellent leadership skills and the ability to lead by example in a multicultural environment.
