Our client, a leading entity in the hospitality sector, is looking for a visionary culinary expert to lead their kitchen team at a new pre-opening concept: Miami Brasserie, a South American-inspired restaurant with Italian fusion influences. This opportunity is available ASAP.

Key Responsibilities:

Culinary Leadership:

  • Spearhead the development and execution of innovative menus that blend South American flavors with Italian fusion.
  • Lead and inspire a team of kitchen professionals to ensure high standards of food quality and presentation.

Menu Development:

  • Create and refine unique dishes that reflect the Miami Brasserie concept, focusing on flavor balance, creativity, and presentation.
  • Ensure seasonal and locally sourced ingredients are utilized to their fullest potential.

Kitchen Operations Management:

  • Oversee day-to-day kitchen operations, ensuring efficiency and adherence to health and safety regulations.
  • Implement and maintain kitchen inventory and procurement processes to minimize waste and control costs.

Quality Control:

  • Maintain the highest standards of food hygiene, safety, and cleanliness in the kitchen.
  • Regularly review and improve kitchen procedures to enhance food quality and service.

Staff Training and Development:

  • Mentor and train kitchen staff, fostering a collaborative and motivated team environment.
  • Develop training programs to ensure consistent food quality and operational excellence.

Cost Management:

  • Manage the kitchen budget, ensuring cost-effective operations without compromising quality.
  • Monitor food costs and implement measures to maximize profitability.

Qualifications:

  • 5+ years of experience as a Head Chef or in a similar leadership role within high-end restaurants.
  • Proven expertise in South American and Italian cuisines.
  • Strong leadership, communication, and organizational skills.
  • Creative and innovative approach to menu development and presentation.
  • Ability to work efficiently under pressure in a fast-paced environment.
  • Exceptional knowledge of food safety and hygiene regulations.
