Candidate Preference
*Experience in Asian cuisine and seafood needed*
• Control and direct the food preparation process and any other relative activities
• Implement menus with preparation and service according to agree upon recipes and
presentation to the letter in his or her station
• Implement daily to do tasks assigned to his or her section
• Inform of repairs when necessary
• Remedy any problems or defects
• Be fully in charge of managing and training kitchen staff
• Oversee the work of stewards
• supervise deep cleaning and daily cleaning task of stewards
• Daily stock orders from vendors and the central kitchen for his or her section
• Comply with nutrition and sanitation regulations and safety standards
• Foster a climate of cooperation and respect between co-workers
• Maintain a clean and tidy kitchen
• Rotate stoke items FIFO in order to maintained a expiry date free environment in his or
her section
• Insure that recipes and platting is being done according to preset standards
• Insure par levels of items are always up to date.
• Inform head chef of missing of 86 items and take action
