As a Specialty Chef, you are not only responsible for planning and managing the culinary aspects, but you are also here to create an experience where our guests can indulge and enjoy the variety of services that we have to offer. Main Responsibilities
• Assisting running of the kitchen on a day-to-day basis.
• Ensure consistency of produce throughout the kitchen and manage the team accordingly.
• Supervise service ensuring the presentation of food is compliant with restaurant standards.
• Assist the Sous Chef in menu compilation and possess an in-depth knowledge of the full menu.
• Proper guest service requires that the food be produced on a timely basis and that the servers are confident in presenting the dishes.
• Assist the Sous Chef in providing “excellent quality” and “presentation” of all food to the guests.
• Preparation and execution of each menu item, the item specifications and presentation must be agreed upon.
• Assist in supervising the daily cleaning of the pantry, cooking line, prep kitchen, dish area, stairs, walk-in, and preparation areas. Maintain a high level of cleanliness within the kitchen facilities.
• Be fully conversant with all the venue’s policies in respect of human resources and team welfare.
• Be fully conversant with the geographical layout of the operation and know the exact whereabouts of all equipment of an operational nature.
• Maintain a high standard of personal appearance and hygiene at all times.
• Maintain a good rapport and working relationship with the front-of-house team, other departments, as well as suppliers.
• Provide a courteous, professional, attentive, and efficient service at all times with all departments.
• Attend and contribute to all team briefings and other related activities.
• Undertake any reasonable tasks and secondary duties as assigned by management. Key Skills
